Having a Special Wedding Day
i came across a wedding blog (www.practicalpinaybride.blogspot.com) and i'm really glad i did...it was a reality check about our wedding preparations and on why we are getting married...it reminded me that what's more important is us after the wedding...i agree though that we should not limit ourselves to cheap suppliers from whom we would be getting services during one of the most special day of our lives...however, i was reminded that i am getting married mainly because i love this one person from whom i am going to spend my forever with...the wedding would mark the start of our lives together and we want it to be very special...special in a sense that people who are really dear to us will be present...special because more than our family and friends being there, GOD will be our Supreme Witness and the Number One Fan of our marriage...i look now at my wedding list and realized there are things that i can let go without looking back from the future and wishing i should not have taken it out...
even before reading that significant blog, i was seriously considering wearing my debut shoes to our wedding...it was a good 12-year old shoes...those carried me from my youth to my adulthood...and i am contemplating that this good pair of shoes will carry me from adulthood to married life...

Thank you, President Cory
it just dawned on me how great Cory was...there is one thing she has done that i personally don't agree but it is such a small thing compared to what she has done for our country, even giving up her own personal life...i now ask myself, what can i do for my country?...small things done with great love would mean much.

i heard this song out of nowhere and i instantly fell in love with it...80's music is still the best...i don't know why, but it really is =)
Never Knew Love Like This Before would definitely be a part of our wedding songs =)
now, i couldn't find Stephanie Mills version in MTV format (if she does have one)...but Lani Misalucha's version is quite cool =)

i cooked all by myself! and i loved it!
yes! for the first time in my life history, i cooked! i decided to do it mainly because i want to surprise dennis for his birthday =) i was able to keep a recipe of one of his favorite dish, Ground Pork with Eggplant...
here goes the recipe...
1 cup Monterey Ground Pork
1 tsp garlic, minced
1 tbsp onion, sliced
2 tbsps Magnolia Nutri-oil
1 pc eggplant, sliced into sticks
1 tbsp green bell pepper, sliced
1 tbsp red bell pepper, sliced
1 tbsp sesame seeds
1 tbsp sesame oil
2 tbsps oyster sauce
1 tsp hoisin
2 tbsps chili-garlic sauce
1/2 cup tofu (soft), cut into cubes
1 tsp ginger juice
1 tsp sugar
1 tbsp shaoxing rice wine
1 tbsp double A diluted in 4 tbsps. water
2 cups water or stock
hondashi, salt and pepper to taste, katsubuoshi flakes (optional)
Procedure:
1. Saute garlic onion in oil or butter. Add Monterey Ground Pork, egg plant sticks, sesame seeds, green and red bell pepper.
2. Add oyster sauce, hoisin and chili-garlic sauce. Add rice wine, ginger juice, hondashi, katsubooshi flakes and sugar. Add stock. Simmer for few minutes.
3. Add tofu and simmer to cook. Season with salt, pepper to taste and drizzle with sesame oil. Thicken with Double A slurry.
